Chocolate Muffins

WOW! The ultimate chocolate muffin for the ultimate chocolate fan! These were so fluffy and rich that with every bite you know something so good must be a sin!


Ingredients:
30g unsweetened chocolate, coarsely chopped
255g semisweet chocolate chips - divided use
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
1 cup brown sugar, firmly packed
2/3 cup whole milk
1/2 cup (1 stick) unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract


Method:
Melt the unsweetened chocolate and about 1/2 cup of the semisweet chocolate chips in the top of a double boiler over simmering water. Remove from heat and cool slightly.
Preheat oven to 175*C.

Grease and flour a 12 cup muffin tin or line with paper liners.

In a large bowl, whisk together flour, baking powder and salt.

In another bowl, beat eggs; add the brown sugar, milk, butter, melted chocolate mixture and vanilla; mix well. Pour this mixture into dry flour mixture. Stir until just moistened; do not over mix. Gently fold remaining chocolate chunks into batter.

Fill prepared muffin tins two thirds full. Bake for 20 to 25 minutes or until muffins test done. Cool in pan on wire rack.

Makes approx. 12 muffins

Verdict:
Do I really have to give an verdict on this one? I baked 12 of these on Sunday as a little surprise when Soeri came home from the weekend at his grandparents! Today is Tuesday and I just ate the last one while entering this post!!! I have never seen muffins disappear so fast. Just one word of warning though: Please serve with tall glass of milk or other liquid ... no, not because they are dry ... because the are so rich!

  1. Wow... i'm the first one to post a comment on this one. Wonder why no one has tried this heavenly recipe yet?!

    Well anyway i'm freaking out on chocolate these days (christmas and all those things associated with it) and tried out the muffins this week... slurp:)

    but meeta i can never execute a recipe without some question and doubt:( so here comes one... the muffins were so fluffy and picture perfect when i took them out of the oven. but the next day (i always bake after 20.00 hrs, please make a note!) it sank into the case. and this happens with all my muffins,everytime i bake them. is there any secret to keeping them fluffy until they last?

  2. Now that is something I have never heard of Latha!! This is just a guess but maybe when you filled the batter into the muffin pan there is air caught up in the middle of the batter. After I have filled the muffin pan (or any other cake) I normally hit the pan a few times on the kitchen counter to release and air caught up in the batter.

  4. Hi Sailu, sure you can do muffins with no chocolate. There should be no trouble if you omit the chocolate here however you might want to try some other muffins on my blog. Check out the recipe index and I am sure you will find something with no chocolate LOL!
