I love this time of year. Nature is alive and the air is perfumed with rapeseed, cherry blossoms and fresh clean air. New budding beginnings! The best part of Spring is certainly the impatient wait for the delicious variety of berries to ripen quickly so I can sit in my hammock, lazing in the warm sun and pop jewels of juicy blueberries, blackberries, gooseberries or cherries.

Click this month is celebrating Spring (Autumn for those down under). I could not miss this party. So I am sharing my epitome of Spring – mixed berries for all to enjoy!

April 2009 celebrates my 2 year anniversary with the outstanding group that call themselves the Daring Bakers. Back in April 2007 we were just 30 members and my first ever challenge was the tough but rather yummy chocolate crepe cake. Today the group is pushing it’s 2000 member mark and we have our own Daring Kitchen, where we get together to discuss the ups and downs of any given challenge.

Monthly Mingle #32 – Spring Cakes

MM-Spring Cakes

Do you hear the birds chirping outside and the perfume of spring flowers all around you? It is officially Spring in the Northern Hemisphere folks.

For my part I am intensively enjoying the gorgeous colorful bounties of fruit readily available in the markets at the moment. I know this will be my last chance to enjoy real Spring fruit and vegetables in Europe for the next few years, as in Qatar I will get almost everything all year round regardless of the season we are in.

It's a goodbye party of sorts as this will be my last Monthly Mingle for a while. I have lined up a few fantastic guest hosts who will help me continue the mingle all the way till October. You can check out the MM Calendar for more details so that you do not miss out on the event when I am away.

I wanted to celebrate with cake and thought I'd invite you all to a Spring party of cakes. Rhubarb, raspberries, strawberries, apricots, and cherries - there is a plethora of fruit to choose from and with your great imaginations I am sure you will come up with explosive creations. Whether it's cheesecake, Bundt cakes, layer cakes devil or angel food cakes - a cake, gateaux or a torte is what I am craving. Not a tart or a pie but definitely a fresh, thick, moist Spring fruit cake.

So, I hope you will come over with your fruity Spring cakes, made especially for me, to celebrate my favorite season of the year - Spring. I am so excited about this that I can hardly wait to see your creations.

Up until Thursday we had picture perfect warm Spring weather. For two whole weeks the sun Gods were generous and along with peep-toe heels and sunglasses, the weather was perfect for barbeques and bike rides. Soeren spent afternoons with his friends outside playing soccer, enjoying picnics or on the playground.

An incredible 10 years ago we celebrated the big 30 and on Saturday it was already time to party into the 40s! It was just a little before his 30th birthday that Tom and I got together. I remember celebrating his 30th with a bang. We’ve done and experienced so much in the 10 years – it’s been quite a bit of fun.

Nika of the excellent Nika’s Culinaria was the gracious hostess of this session’s DMBLGIT, a monthly food photography contest.

All submissions are scored in three categories:

Aesthetics
Edibility
Originality

My photo for Nutella Day was lucky enough to win the overall 2nd place! Yaaah! Thank you judges, thank you Nika!

If you all remember, I made these scrumptious Nutella Flakey Swirls with the spoonful of Nutella!

In other news: Brenda of Brenda’s Wedding Blog has featured my Pretty in Pink Rhubarb Raspberry Trifle in her Lime Green and Pink Bridal Shower. Simply fantastic - as I am all into planning our own vow renewing ceremony. Yesterday I found my dress – it’s drop-dead red!
